Happy Independence Day and moist chocolate cake!

Wishing all Indians around the world, a very Happy Independence Day! As they say, you can take an Indian out of India, but never India out of an Indian, so we are all proud to be Indians! To celebrate this day, I decided to bake an egg-less chocolate cake using this recipe of a moist cake which uses no butter or eggs.

Ingredients:
All purpose flour/maida - 3/4 cup
Cocoa powder - 1 &1/2 tbsp
Baking soda -1/2 tsp
Water- 1/2 cup
Oil - 1/8 cup
Sugar - 1/2 cup
Salt- 1/4 tsp
Lime juice 1/2 tbsp
Vanilla essence - 1/2 tbsp
(I halved the original recipe)

Preheat oven to 180 degrees C.
Sift together the flour, soda, and cocoa. In a bowl whisk together oil, water, salt, sugar, vanilla essence, and lime juice. Add the sifted flour mixture a little at a time. Mix well to avoid lumps. The dough will be a little thinner consistency than the normal cake batter. Pour in a greased baking dish  and bake for 30-35 minutes or until toothpick comes out clean when inserted into the center of the cake .

 The cake turned out amazingly soft and moist though the pictures aren't that good. Do give this recipe a try. It is easy to make and needs the most common ingredients.

Tips: When closing the oven door, try not to bang the door. Try to close the door as gently as possible. This prevents the air from the oven rushing out. The cake should be baked as soon as possible after preparing the batter. Do not let the batter sit for too long.

Belated Independence day wishes to you & all mangala.. From a couple of years,myself along with Guru, my good friend, keep visiting nearby school to witness the celebrations. We do visit on republic day too. It is so amazing to see those small cute kids marching past holding our flag high n fluttering. Can read more in one of my earlier posts.
